Pastrycook ANZSCO 351112

We are proud to have taken over the Dromana Artisan Bakery which already has a great local following and a good standing in the community. We are looking for a pastry cook with a flare and the experience to take the Bakery to the next level as we are going to expand in the future to provide wholesale bread and pastries to the surrounding areas.

We want a big ideas pastry cook who isn’t afraid of hard work and working nights with availability over the weekends. Able to attend meetings to create new artisan products and contribute to the growing of the business.

Qualifications

Certificate 111 or certificate IV in Pastry

Employment Experience

2 years with qualifications

3 Years without qualifications

Essential Skills

The candidate filling the position will be expected to have the following skills:

Ability to produce pastries buns cakes biscuits using manual and/or industrial processes

skills on training new people

Knowledge of raw materials for preparation times and procedures and various pastry techniques

Knowledge of recipes and production techniques for pastries

multitasking

Ability to operate electric, gas ovens

Knowledge of health, safety and hygiene regulations for food preparation

Ability to multitask

Physical strength and stamina

Organizational and planning skills

Ability to remain calm and focused in a fast-paced environment

Main Tasks

  • Weighing and mixing ingredients for orders
  • Diagnose and respond to product and process faults in pastry
  • Control mixing times and transfers dough to tempering rooms to prepare for baking
  • Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of pastries and cakes
  • emptying, cleaning and greasing baking trays, tins
  • Decorate cakes and pastries with cream, icing, fruits ,gelatines, custards and lemon curd
  • Preparing pastry fillings

  • Designing and improving recipes with staff heads and directors
  • Measuring and combining ingredients and using mixers, blenders, heat sources, and other equipment to make pastry goods such as

    • Buns and rolls of Apple Scroll, Cinnamon Scrol,l Sourdough Fruit Buns, Choc Orange Buns, Sultana Buns
    • Coissants
    • Slices Caramel, Mud, Cherry Ripe, Hedgehog, Lemon
    • SAVOURIES – MINI Party Pies, Cocktail Sausage Rolls, Cocktail Spinach & Ricotta Rolls, Mini Quiches, Vegetarian or Lorraine
    • Banana
    • Muffins and scones
    • Danishes
    • Cheescake
    • Tortes
    • Flans and Tarts
    • Tartlets
    • controls mixing times and transfers dough to tempering rooms
  • control baking times and monitor the temperature and appearance of products, empty, clean and grease baking trays, tins and other cooking equipment
  • Ability to make cakes for events birthdays, weddings etc
  • Cleaning and restocking workstations and ensuring that all equipment is sanitized and prepared for the next shift.
  • Weighing and measuring ingredients for the preparation of baked pastries
  • Kneading dough by hand or using industrial dough mixers
  • Baking items in oven (electric, gas or wood-fired)
  • Monitoring oven temperature, humidity and baking times
  • Removing baked pastries from oven

  • Complying with food hygiene and safety requirement
