TOTE Bar & Dining will soon be the new heartbeat of Moonee Ponds, just 6kms from the CBD; it is Melbourne’s newest and most unique social offering.

Heritage-listed and built in 1938, the building been protected and restored with a sympathetic yet contemporary refurbishment to become TOTE Bar & Dining.


A destination experience, with deliciously uncomplicated food from well-sourced, high quality, sustainable ingredients, this venue will not disappoint.

From the roaring fireplace, high ceilings, racecourse shaped bar, alfresco areas, private dining room, and nestled in parkland - TOTE is bursting with unique attributes.


Open for Breakfast, Lunch, Dinner, and as an exclusive event space, your time will be well spent with no two days the same.


The Moonee Valley Racing Club is looking for an experienced Bar Manager to ensure the bar operates smoothly day-to-day, with sufficient stock and staff at all times. The role must develop, innovate and deliver service excellence that drives TOTE Bar & Dining to be a world-class food and beverage venue. 


Key responsibilities of the role include but are not limited to the following:


  • Implement the operational plan for TOTE Bar & Dining including beverage stock, bar operation, recruitment of key talent, service excellence, client and stakeholder management.
  • Deliver beverage options and service that exceeds the expectations of our customers.
  • Responsible for the design of the wine and wider beverage list.
  • Oversee the preparation of beverages and ensure quality of product served.
  • Deliver TOTE Bar & Dining service standards, team guidelines and operational standards.
  • Roster bar staff to ensure the operation runs smoothly as well as meeting budget.
  • Responsible for stock management ensuring that adequate stock is on hand for daily operations and any functions and events.
  • Respond to feedback from patrons arising from any element of the food and beverage service.
  • Oversee cleanliness of staff and physical bar area, paying special attention to possible health hazards and violations.
  • Responsible for operation of the venue in the absence of the Restaurant Manager.


To effectively perform this role, the successful candidate must possess the following skills, experience and qualifications:


  • 3+ years' experience in bar supervisor or manager role with a high focus on quality & profitability.
  • An engaging leadership style, a positive attitude, resilience and strong communication skills.
  • An exceptional understanding of what it takes to run a profitable business as well as exposure to commercial negotiations and a proven track record in leading high performing teams.
  • Exceptional time management, methodical planning, organisation, and a great eye for detail.
  • A desire to constantly exceed guest expectations and a passion for continuous improvement.
  • A passion for leading from the front and being hands-on in their leadership style.
  • Experience in successful people management practices; Ability to lead, manage, train and mentor a team of full time, casual and part time staff.
  • Proficiency with point-of-sale software.
  • Extensive working knowledge of alcoholic and non-alcoholic beverages.


You must be prepared to work outside the spread of normal hours with availability to work across the week, weekends and public holidays when required.
